I have used leftover grilled chicken in this recipe. You can either use raw or cooked chicken in this dish, either one is fine. If using raw chicken, just cut it up into bite sized pieces, season it with salt, pepper and saute it for a few minutes before adding it to the mixture. And if you have any leftover chicken, it's a great way to use it up. As of veggies, you can add some Bell peppees, fresh broccoli, asparagus, green beans, carrots, cabbage or peas, it's totally up to you. Now lets move on to the ingredients and recipe.
INGREDIENTS:
* Hakka noodles- 2 packs
* Egg- 3
* Chicken- 2 cups (Leftover or fresh chicken)
* Onion- one medium size sliced finely
* Spring onion- 1/3 cup finely chopped
* Green chilli- 2 sliced
* Garlic- 2 tbspns finely chopped
* Ginger- 1 tbspn finely chopped
* Carrot- 1/3 cup julienned
* Capsicum- 1/3 cup julienned
* Frozen Peas- 1/3 cup
* Red chilli sauce- 3 tbspns
* Green chilli sauce- 3 tbspns
* Soya sauce- 2 tspns
* Chow mein noodles masala- 2 tbspns
* Salt- as needed
* Oil- 6 tbspns
- PREPARATION TIME: 10 mins
- COOKING TIME: 20 mins
- SERVES: 4
PROCEDURE:
* I have used this Hakka noodles. You can use any type of plain noodles.
* Boil water in a pan with salt and 2 tbspns oil. Add noodles to the boiling water and let it boil well until it's cooked.
* Once the noodles is done, strain it well and wash it off with some cold water, which prevents it from further cooking. Add 1tbspn oil to the noodles and give it a nice mix. Adding oil to the cooked noodles will prevent it from sticking together.
* Break the eggs in a bowl add little salt and mix it well. In a pan add 1 tbspn oil and scramble cook the eggs and set it aside.
(If you are using raw chicken cook them now and keep it aside)
* Heat up 2 tbspns oil in a large wide bottom pan. Once the oil is hot, add chopped garlic and ginger. Let it cook well until they are nicely brown.
* Now add onions and green chillies. I added both spring onions and onions. Let the onions saute well until they are translucent.
* Now add the vegetables and saute them for 3 to 5 mins. I like my veggies to be on the crunchy side in my noodles. If you want it to be little more softer, cook them for few more minutes until done.
* Now it's time to add all the sauces. Add green chilli sauce, red chilli sauce, soya sauce, chow mein masala and give it a nice mix.
* Add the cooked eggs and chicken and mix it will. Lid it on and let it cook for 5 mins.
* Add the cooked noodles, mix it well until combined and keep the lid on for another 5 mins.
* Top it off with some chopped spring onions.
* The spicy chicken noodles is now ready. Serve it hot, with some lemon wedges and enjoy!!!
