Mudakkathan Keerai Dosai (Balloon Vine Leaves Dosai)

Hey guys! Here is the most nutritious yet delicious, Mudakkathan Keerai Dosai (Balloon Vine Leaves Dosai). Mudakathan keerai is an amazing ingredient to include in our diet as it has amazing nutritional value, medicinal uses and health benefits. It is especially well known for treating joint pain and promoting hair growth. This is a very safe herb, that can be used even for treating children’s cough & cold. And I remember eating this dosai very often during my childhood days. After so many years, I got an opportunity to eat this yummy dosai again. So wanted to share the recipe with you guys! The recipe is very simple and can be made in minutes, if you have your dosai batter handy. Now let's go on to the recipe.

INGREDIENTS:

* Mudakkathan keerai- 1 cup

*Pepper corns- 1 teaspoon

*Jeera- 1 teaspoon

*Garlic- 1 to 3 garlic pods (as per your taste)

*Chinna vengayam(Shallots)- 2 to 3 onions

*Dosai batter- 2 cups

*Salt- as per your taste

*Gingelly oil- 1 teaspoon

PROCEDURE:

STEP 1:(Making the spinach paste)

*Heat a pan and add gingelly oil.

*Once the oil is nice and hot , add pepper corns, jeera, garlic and onion. Saute them for 2 to 3 minutes.

*Once the onion is translucent, add the spinach and saute until the spinach gets cooked well (approximately takes 5 minutes).

*Once done, turn off the gas and  let the mixture cool down. Add the ingredients to a mixer jar and grind them into a fine paste, by adding little water.

STEP2:(Making dosai)

*Now take a bowl, mix the spinach paste and dosai batter together.

*Add salt if needed.

*Heat the dosa pan. Once the pan is hot, start making dosa's.

*I would recommend adding gingelly oil for this dosai, as it tastes better, than adding ghee or any other oil.

*Once the dosai is nice and crispy, serve it hot with any chuttney of your choice or even tastes great with idly podi.
