Vallarai Chuttney (Asian Pennywort)




      Hey guys! Today I am going to share the recipe of healthy and nutritious Chuttney made with Vallarai. Vallarai (Asian Pennywort) is an ancient herb, which is used for treating many conditions, including swelling and joint pain as well as anxiety, fatigue and memory issues. Additionally, it has been commended as a great antidote for improving memory and therefore, a considered food for the brain. Consuming 2-4 raw  leaves a day may help with memory issues and rejuvenate the brain. It's absolutely good for the growing kids, as it helps improve their Immunity. And it still has an endless medicinal properties and nutritional values. The recipe for this chuttney is super simple and it's yummy as well. It goes well with Hot Rice, Chappathi, Idly and Dosai. Now let's go on to the recipe.




INGREDIENTS:

*Vallarai leaves (Asian Pennywort)- 1 cup

*Onion- half the onion(Medium sized)

*Tomato- half the tomato(Medium sized)

*Garlic- 6 to 7 garlic pods

*Tamarind- A small gooseberry size

*Dry red chilli- 2 to 3 (as per your taste)

*Urad Dhal- 2 tbspns

*Hing- 1/2 tspn

*Salt- as per your taste

*Mustard seeds- 1 tspn

*Jeera- 1 tspn

*Gingelly oil- 3 tbspns



PROCEDURE:


*Heat the pan and add 1 1/2 tbspns of gingelly oil.


*Once the oil is hot, add urad dhal and dry red chilli.


*Roast the urad dhal and chilli on medium flame, until the urad dhal changes into light brown colour. Continue to cook on medium flame throughout the cooking process.


*Once it's roasted, add garlic, tamarind and hing. 

*Fry them untill the garlic turns light brown in colour.


*Now the garlic is nice and brown, it's time to add the onions and salt. 


*Saute it until the onions are translucent.


*Once the onions are done, add the tomatoes and saute it until they turn mushy.


*Now it's time to add the spinach.


*Saute the mixture until the spinach gets cooked well.

*Once done set it aside and let the mixture cool down.

*Now add the mixture to a mixer jar and grind it into a fine paste and transfer it into a bowl.

*Heat a pan, add rest of the oil (1 1/2 tbspns). Once the oil is hot add mustard seeds, jeera and let it splutter.


*Now add tempering to the Chuttney. It goes well with Hot rice, Idly, Dosai and Chappathi. Have it with any food of your choice and enjoy!!!
