Surakkai Pulao ( Bottle gourd Pulao)



           Hey guys! Presenting you all the Surakkai Pulao, which is the tastiest and a unique variety of rice made with Surakkai (Bottle gourd). It's the most healthiest and delicious pulao variety I have ever tasted. I learnt this recipe from my sister. And Bottle gourd is so nutritious and have lots of health benefits. So it's very important that you add it to your diet on a regular basis.

HEALTH BENEFITS:

            Bottle gourd contains 92% water and it also helps to lower the bad cholesterol levels by keeping your heart healthy. Bottle gourd is a vegetable, that's high on water and is a rich source of vitamin C, K and calcium. The juice is also beneficial for diabetic patients as it stabilizes the blood sugar level and maintains blood pressure. The best time to have it is in the morning. And it has lots of other nutrients too.

And in this recipe I have used only a little portion of rice for a whole Bottle gourd. So it's really on the healthier side. It's a perfect lunch box recipe and it can be made easily in your busy morning schedule. It tastes amazing with Raitha ,potato chip or even pickle. Now let's move on to the recipe!


Bottle gourd



INGREDIENTS:

*Bottle gourd- 1 medium sized chopped in cubes

*Basmathi Rice- 1 1/2 cups

*Dried green peas- 1/2 cup soaked overnight

*Green chilli- 2 or more as per your taste

*Onion- one small onion sliced 

*Mint and coriander leaves- one handful (optional)

*Ginger garlic paste- 2 tbspns

*Turmeric powder- 1/2 tspn

*Garam masala- 1 tspn

*Shah jeera- 1 tspn

*Cinnamon- 2 half an inch sticks

*Cardamom- 4

*Cloves- 4

*Ghee- 4 tbspns

*Salt- as per your taste


PROCEDURE:


*Wash and soak the Basmati rice for 30 minutes.


*Peel the skin of Bottle gourd, remove seeds and cut them into cubes.


*Heat the pressure cooker and add 2 tbspns of ghee (Cook throughout the process on a medium-high flame)


*Once the ghee is hot, add all the whole spices and let them flutter.


*Now add green chillies and fry them for a minute.


*Add the onions. Saute the onions until they are nicely translucent and slight brown.


*Once the onions are sauteed well, add the ginger garlic paste.

*Saute it until the raw smell goes off (At this point you can add the mint leaves and give it a stir)


*Now add the turmeric powder and garam masala and saute it for a minute.


*Add the bottle gourd and mix it well with the masalas.


*Add the soaked peas and give it a nice stir (Do not saute the bottle gourd for more than 2 to 3 mins, as it will start oozing out the water)


*Add the rice. Give it a stir without breaking the rice.


*Add some more ghee at this point, so that the rice will be fluffy without being sticky.


*Add required water (for 1cup of rice 1 1/2 cups of water) and salt. 


*Let it boil nicely. Once you could see the rice puffing up close the lid, put the weight on and set the flame on low.

*Let it cook for 15 to 20 minutes (Do not let it whistle, as it will change the flavour of the Pulao)


*Once done give it a nice stir without breaking the rice (At this point you can add cilantro)


*Now the delicious surakkai pulao is ready. Serve it hot with Onion Raitha and enjoy!!!

( You can even prepare this recipe in Insta pot. Do all the sauteing in saute mode, after adding rice close the lid and cook it on manual mode with high pressure for 2 to 3 mins)

           Hey guys! Presenting you all, the Ambur Chicken Biriyani, which is one of the most famous South Indian delicacies.
