Cabbage Appalam Kootu (Cabbage Lentil Stew with Papad)

         Hey guys! Presenting you all the most famous South Indian delicacy Kootu made with Cabbage and Appalam (Papad). It's a stew made with dhal and vegetable. You can even make the same recipe with other vegetables like Pumpkin, Bottle gourd, Snake gourd, Ridge gourd or even mixed vegetables. This is a very simple recipe and it's very healthy. This recipe goes well with white rice and it's a best side dish for Vathalkuzhambu, Rasam or even Curd rice.  Let's go into the ingredients and recipe.

INGREDIENTS:

* Channa dhal- 1/2 cup

* Cabbage- 2 cups

* Tomato- 1 medium sized

* Turmeric powder- 1/2 tspn

* Hing- 1 tspn

* Coconut- 3 to 4 tbspns grated

* Dry red chilli- 3

* Jeera-  2 tspns

* Mustard seeds- 1 tspn

* Coconut oil- 3 tbspns

* Salt- as needed

* Fried Papad- 15 to 20

* Coriander leaves- few strands chopped for garnishing.

  • PREPARATION TIME: 10 mins
  • COOKING TIME: 30 mins
  • SERVES: 4

PROCEDURE:

STEP 1: COOKING THE DHAL AND VEGETABLE:

* Add channa dhal to pressure cooker and add one cup of water, one tomato chopped, turmeric powder and hing to it.

* Mix it well and pressure cook it for 5 whistles until the dhal is nicely cooked.

* Now in the same pressure cooker, add the cabbage and another 1/2 cup of water.

* Mix it well and cook it for one more whistle.

* Now the dhal and vegetable is ready.

STEP 2: MASALA FOR KOOTU:

* Add coconut, 2 dry red chillis (you can add 1 or 2 more if you need it little spicier) and jeera to the mixer jar with little water and grind it into a smooth paste.

* Now the masala is ready.

STEP 3: FINISHING THE KOOTU:

* Add the masala, enough salt to the Kootu and mix well, let it boil for 5 mins and turn off the flame.

* In a pan add coconut oil, once the oil is hot, add mustard seeds and let it splutter. Then add jeera seeds and dry red chilli to the tempering.

* Now add the tempering to the Kootu.

Appalapoo

* Now this step is totally optional. You can fry some appalapoo and mix it with the Kootu. In Kootu, we use a specific type of appalam named Appalapoo, which is available in all the Indian grocery stores. Appalapoo is slightly thicker than the normal appalam, so that it doesn't break when you add it to the Kootu.

( When you add appalapoo to kootu, it usually absorbs the water in it. So make sure to add little extra water when you are adding the papads to the Kootu)

* Add fried papads to the Kootu and mix it well.

* Add some freshly chopped coriander leaves.

* Now the piping hot Kootu is ready for you enjoy. Serve it with hot rice and enjoy!!!
