Kumbakonam Kadappa



          Hey guys! Presenting you all the famous and delicious tasting south indian delicacy Kadappa, which is very popular in Kumbakonam. It's a unique variety of sambar, that goes well with idly and dosa. It's a very healthy dish, as we add vegetables and protein rich moong dhal. It is a very subtle sambar, that even kids can enjoy. Let's go into the ingredients needed and recipe.

INGREDIENTS:

* Moong dhal- 1/2 cup

* Tomato- 1 medium sized

* Carrot- 1/3 cup chopped

* Beans- 1/3 cup chopped

* Potato- 1/2 cup chopped

* Frozen peas- 1/4 cup

* Ginger- 1 1/2 tbspn chopped

* Garlic- 10

* Green chilli- 2 or as per your spice level

* Fennel seeds- 1 tspn

* Cinnamon sticks- 4 one inch sticks

* Turmeric- 1/2 tspn

* Hing- 1 tspn

* Salt- as needed

* Oil- 2 to 3 tbspns 


  • PREPARATION TIME: 15 mins
  • COOKING TIME: 20 mins
  • SERVES: 4



PROCEDURE:


* Add washed moong dhal to the pressure cooker and add 1 cup of water, chopped tomato, hing, turmeric powder and let it pressure cook for 3 whistles.


* Now the dhal is cooked well. 


* Add the chopped vegetables (except the frozen peas) to the dhal, with one cup of water and mix it well.

* Cook the dhal and vegetables together for another whistle. Make sure you cook them together for one whistle. Because if you leave it for another whistle, the vegetables might become mushy.


* Now the dhal and vegetables are cooked well.


* Add ginger, garlic, green chilli and fennel seeds to the mixer jar and grind it coarsely.


* Now add oil to the pan. Once the oil is hot, add the cinnamon sticks.


* Add the ground masala and saute it until they turn into light brown (Do not let the ginger garlic burn)


* Add the frozen peas and saute it for 2 to 3 mins.


* Now add the cooked dhal and vegetables and add enough salt.
Wash remaining dhal in the pressure cooker with 1/2 cup of water and add it the Kadappa.

* Let the sambar boil for 5 mins on a medium high flame. 


* Now the flavourful Kumbakonam Kadappa is ready. Serve it with hot idlies or dosas and enjoy!!!
